Deviled Chicken Breasts + Dessert :)

Deviled Chicken Breasts
This is an old favorite of mine and until last night I had no idea how many calories were in it. More importantly I had no idea how much sodium was in it. Yikes! However, it is still an absolute favorite meal of mine. And after last night it's a favorite of the kids as well.

Basically this is a quick and easy meal that you broil in the oven and it has a smokey, tomato-y flavor, as best I can describe it. More importantly I'll give you the recipe because it's one that I found in one of my recipe collections, so I don't have a link for it.



Deviled Chicken Breasts, Serves 8

4 boneless skinless chicken breasts, fresh or thawed, cut in half lengthwise
3/4 cup chili sauce
3 Tbl butter, softened
2 Tbl Worcestershire sauce
1/2 tsp salt
1 tsp garlic, minced
1/4 tsp hot pepper sauce

1. Preheat broiler. Line a cookie sheet with foil. Combine chili sauce, mustard and butter in a bowl. Add Worcestershire sauce, salt, garlic and hot pepper sauce; mix well.

2. Cut chicken breasts in half lengthwise to make two proportional pieces. Arrange chicken on a baking pan. Brush chicken on all sides with mixture. Broil chicken, 4 inches from heat for 10 minutes. Baste with more sauce mixture and return to the oven for another 10 minutes, baste and continue to broil for 5 minute intervals until the chicken is no longer pink in the middle and juices run clear.

3. Remove to a serving platter. Drizzle with pan drippings or remaining sauce mixture (optional).

One serving is approximately 3oz of chicken: 136 cal | 8 carbs | 3g fat | 17g protein | 735mg sodium

**In regards to the nutrition facts, this was calculated using My Fitness Pal. I used Tyson Frozen Boneless Skinless Chicken Breasts which are approximately 5-6oz each; Heinz Chili Sauce; Smart Balance Omega Butter Spread; Morton's Natural Sea Salt; Dried Minced Garlic; Heinz Worcestershire Sauce; and Tabasco Smokey Hot Sauce. Disclaimer: I am not a nutritionist and am only providing this information for an example.

I served it up with half a cup of roasted garlic rice and a cup of Green Giant Steamers Healthy Colors Farmers Blend vegetables. The rice is simply minute rice with a 1/4 teaspoon of Tone's Roasted Garlic seasoning added to the water while cooking.

Like I said the kids devoured their meals and that's saying something for Baby Girl as she almost always fights me at dinner time. So I told her if she behaved during dinner she could have an extra special treat. Now, I should have stuck to my original thought which was to share some Skinny Cow with her. But I opted to have her help me make a special treat...a monster chocolate chip cookie.

Not such a great idea when you're trying to change your lifestyle. Three months ago I would have binged on the whole cookie in one night. However I am definitely showing signs of restraint and using moderation with this delight. I can't say the same thing for my husband. ;)
