So.close. You see that? I worked my booty off and came soooo close to 25 pounds down today. That just means I need to kick it up a notch to ensure I get that 25 pound award next week. Crossing my fingers, praying and asking for all the help I can get because we have a family reunion this weekend and you know what that means.... FOOD. My family cannot get together without food. And being that we will be far from home it'll be a little more difficult to get the proper foods at our function, but I'm not above going to the local store for some fresh produce! I've also got it in my head to squeeze in a walk or two in between activities, which includes a water park. Wish me luck. :D

How was my week?

Well, my week went well. Better than I expected. I planned for 5 days of exercise and I got all 5 days in and then some! For my new goal of 33 points a day...I had several days above that. However, with the amount of exercise I was getting, I had to eat those points and I do not feel guilty about it. :)

Turkey & Zucchini Stuffed Bell Peppers

Turkey & Zucchini Stuffed Bell Peppers


Makes: 6 pieces • Size: 1 piece  Points+: 3 pts

Ingredients:

  • 6 large bell peppers, tops sliced off and seeded
  • 1 pounds Jennie-O Extra-Lean Ground Turkey 
  •  1 to 6 cloves garlic, sliced or minced
  •  1/2 cup scallions, sliced
  • 1 medium zucchini, peeled & grated
  • 2 tsp ground cumin
  • 1/4 tsp sea salt (to taste)
  • 1/4 tsp ground black pepper (to taste)
  • olive oil cooking spray
  • 1/2 cup fat free shredded cheddar cheese 

Directions:
Preheat oven to 450°. Slice the tops of the bell peppers off, remove the seeds. Rinse and Dry the bell peppers and set aside.  

Brown the turkey and crumble while cooking over medium heat in a pan.. Slice or grate the garlic. Slice the scallions. Add the garlic and scallions to the turkey when only a little pink remains. Grate the peeled zucchini and add to the turkey mixture. Add cumin, sea salt and black pepper. Simmer for five to ten minutes longer. 

Spray a foil lined glass pan with cooking spray. Set each bell pepper in the pan. Fill each bell pepper with a scoop of the turkey zucchini mixture until the peppers are full. Cover with foil.

Place
 the foil covered pan in the heated oven for 30 minutes. Remove the pan from the oven. Sprinkle the cheese over each pepper and Enjoy!

I wanted to try something "different" last night in an attempt to squeeze more veggies in. I think I was pretty successful. One thing I noticed...it needs more of a punch. So I think a smidge more salt might have helped, but I think it needs some spice. I'm not sure if I'll try ancho chili powder or crushed red pepper flakes, but I will try adding a bit more oomph to it next time.

I also had some rather extra large bell peppers so there wasn't quite enough filling to reach the tops of them, I may toss in some diced plum tomatoes and see if that won't help render the situation. Have fun with it and let me know what you add to it!

Recouping & Looking Ahead

Yup.... 106º today. I didn't realize it when I started out for my walk turned jog. How's that? I didn't realize it was quite so awful until a block into jogging it because really really difficult to breathe. Then I "realized" man, it's like a furnace blowing out here. I guess 12 mile an hour winds would do that. I wanted to bust out at least four if not five miles. Sadly after jogging and alternating walking the first two miles, and arriving around the two and a half mile mark I started feeling sick to my stomach. So I sauntered on home and finished just three miles. But that's great.


I've been sickly and recovering from an allergy attack since Sunday. But I am determined to keep working out while recouping. It might not be a big deal to some, but for me when a road black such as this would arise in the past I would just give up all together and a few days off would turn into weeks and so forth. Not this time! I am adamant about keeping up with the exercise as long as my body can handle it. ;)

We Need To Talk

So yesterday I showed you my pretty new friend? Well, today it wasn't much better. However, we went to Chili's for lunch. We wanted to try something "different." Well I opted to get a Bacon Cheeseburger...I know, shame on me. But I ordered is sans Mayo and pickle, because dill pickles are of the devil. But that's neither here nor there. I also requested a wheat bun...and a side of fries. Well I thought it can't be that bad compared to their "Lighter Choices" Menu. I mean seriously, their lighter choices should be called, just this side of what you could have ordered full fat menu. In order to qualify for their special menu it has to come in under 730 calories. WHAT? Seriously... So their GRILLED CHICKEN SALAD, has 430 calories alone. Yes, you can shake your head in disgust as I did. I'm sorry but no salad with that many calories is worth eating.

Back to my burger, so we place our order. And I being, naughty didn't check the points before hand and I am kicking myself in the a$$ for not doing so. You guys... 42 points for ONE FREAKING CHEESEBURGER. Granted, I don't know how many points are knocked off for the mayo, but OH MY GEE. The fries? 10 points. Needless to say I immediately boxed up half the burger. Sent half the fries packing to my daughter's plate as she opted for pineapple for her side (yes, she's my fruit baby and no she didn't even eat half of the fries I put on her plate). So, I'm kicking myself, but I also told myself I needed a splurge as I hadn't had one in a while.

I get home and we all take a nap. After my nap I get myself some dinner while composing myself, as it's been a rough, long day. The kids get up late from their nap and I decided we need to go for a walk. I mean after all, it was 104º and that was a bit much for the kiddos to be in. I figured I'd wait until the sun was almost down and it had cooled down...then I find out it's still 102º at 8:30pm. But, we made a go at it anyways. I managed to work in 3 miles. I cut it short 1) So I didn't put too much stress on my blister and 2) Lightening. Believe it or not, but there were storm clouds overhead. It was freaking baby girl out, so I thought it best to call it a night. The good news is I had some kickin' pace times. My first mile was S-L-O-W, but the next to were under 17 minutes!!!

So the whole point of this post??? I need to find some alternatives to walking outside. It's supposed to 107º by next Wednesday. I love the heat, I love sweating but I cannot justify putting my babies through that. So I've determined that alternatives are a must.

Since I don't have a gym membership I will working through Lazy Girl Fitness. What is that? Well, you know being a stay at home mom doesn't mean you sit around eating bons bons all damn day. I have two very active children, one husband on the graveyard shift and boat load of things that have to happen to keep our house somewhat presentable.

So, Lazy Girl Fitness are simply exercises that you can do, in your home, with little to no equipment. They are quick, simple, and do their job. For example, why just brush your teeth? Why not brush your teeth while doing toe raises? Better yet, why sit and fold laundry when you can wall sit & fold laundry. GENIUS!

I'd really like to work on my core some, as I'm not targeting it nearly enough. However, with kids I'm finding that difficult as they use my as a jungle gym as soon as I hit the floor. It wouldn't be such a bad thing if someone was standing by to help me wrangle them. Not to mention they think "instant pony that must be bounced on" if they catch a glimpse of me on all fours. Now, I know I can use their weight to my advantage, but they need some listening skills first. ;)

That's a number I like seeing. :D

Another fabulous thing about today's weigh in? I received my 16 week award!!!! It feels awesome to know that I've stuck with this program for that long. Why? Because I can't say that I've stuck with any other program for more than a month or two. That should tell you right there why Weight Watchers is so great.

In other news, I've been sticking to my workouts but they've been less frequent. While I know there's a need for exercise I have a legitimate excuse. I'm trying to remedy it, but working out is not helping the situation any... So, if you have a weak stomach DO NOT SCROLL DOWN.

Catching Up

Well, I forgot to post last Tuesday's weigh in... I was down a whopping 0.4 lbs which brings me down to 239. Hey, it wasn't a gain!

I was a bit distracted as following my weigh in as I had my annual female appoint...you know. :/ It was both a happy appointment, yet a bit concerning. For the first time in my life, my doctor found a lump that had gone undetected by me. Needless to say an appointment was quickly made for a mammogram & ultrasound.

Long story short, that appointment went well. There is no cancer, however my doctor called me himself and wants me to see a surgeon. There's a possibility of a minor procedure in my future, but all should be well.

For now I'm chugging along and trying to stay focused on my weight loss. The laughable factor about this experience? My doctor believes it's possible this lump has been there all along, but with nursing two babies back to back and being overweight it may have went undetected. But because I've dropped 40 pounds, he thinks that's why it was found. Really? A health issue caused BY WEIGHT LOSS??? I just have to laugh. So in a sense, losing weight is having some really positive affects on my body but is also allowing a few others to seep through the cracks. But I ain't gonna stop now!
