I've never had a chimichanga. Does that surprise anyone? LOL. So I wasn't sure about this recipe, but it had several great factors going for it.
1) It's a SIMPLE recipe, not too many ingredients!
2) It sounds good, and tastes even better. Just the right amount of spice. But if you can't handle spice I'd forego the crushed red pepper flakes.
3) You can prepare several servings of the meat ahead of time & just reheat it as needed to make another chimichanga for your next meal!
4) It's NOT FRIED! Apparently the real-deal is fried, again not ever having one I didn't know that, but I'm all for non-fried food.

New Plan
I have been trying to write this post for three days now...three. It's not that I didn't want to write it, it's just that life has been keeping me occupied. ;0)
Friday was grocery day. This time we had a different approach, or shopping list. Fresh veggies and fruit. While we're not strangers to the concept buying the copious amounts of fresh food was a first. See all the pretty food?

The Mental Side of Town
Last night I had a break down, not a break through, but a break down. I sobbed/cried uncontrollably at the thought of hitting the one year mark and still being at square one. I Google a ton of ideas, gimmicks and in the end had to go to bed. I just couldn't take much more.
My mental state seems to be in a very unstable place right now & I'm finding myself very, very hormonal. It dawned on me today...my son has been slowly weaning the last month and I've been dealing with the affects of attempting to dry myself up. So factor in that my hormones are changing/decreasing and what have you and the fact that I realize I will never nurse another child of my own...and I'm a wreck. We worked so hard to make everything happen so that I could breastfeed, here we are shy of two years later and it's nearly run it's course. While I'll be glad to call my breasts my own again, they aren't the same. But hey, who's aren't after having children?
Another issue I've tossed around is the fact that I feel guilty for letting myself slide backwards after making so much great progress. I let the eating habits fall into the toilet. I've gone backwards and I think I'm really pissed at myself which causes me to cry about it. I guess you could call me a cry baby, but whatever. At least I'm trying to face my demons. I'm trying to figure out where to go from here...

The Daily Struggle
So...here we are 4 days into the new year. I.need.help. I cannot for the life of me figure out nutrition. There I said it, it's out in the open. Now what?
I've looked into Daily Burn, which sounds like an okay idea, but...they want money. That's the problem with this damn world. No body will help anybody achieve their goals without wanting to make a buck. And on the other side of the coin, the old cliche "you get what you pay for." I guess if I can't pay for it, I can't get it, huh?
So I'm reaching out to you, my few followers... where do you turn for nutrition advice? If you've been there/done that, what worked for you and why? Have you found a fail proof plan? Any advice will be appreciated.Otherwise I feel doomed to keep repeating the same vicious cycle over and over and over.
And speaking of nutrition... I made up a new recipe tonight. Not too shabby.
*1 Tbsp Sesame Seeds (0 cal per 1/4 Tbsp)
*2 Tbsp Heavenly Olive Oils & Vinegars - Pomegranate Balsamic Vinegar (5 cal per Tbsp)
* 1.5-2# BS Chicken Breasts (110 cal per 4oz)

Marinade the chicken, in the fridge, for at least a half an hour. If in a pinch toss and let sit while you warm the pan.
Toss the chicken and marinade into a pan heated to Medium. Cook, turning occasionally until no longer pink. Do not over cook.

Pomegranate Sesame Chicken
*2 Tbsp Heavenly Olive Oils & Vinegars - Pomegranate Balsamic Vinegar (5 cal per Tbsp)
* 1.5-2# BS Chicken Breasts (110 cal per 4oz)
In a Medium/Large Bowl mix the sesame seeds and olive oil.You could leave the breasts whole or use tenders, but being lazy I didn't have time to unthaw the chicken completely so I sliced it in to equally sized pieces.

Day one SUCKED. The first thing in my mouth was a beer followed by a donut shortly after midnight. I followed that up with copious amounts of crap food. No exercise, just stressing about everything going on right now...

A Whole Lotta Soul Searching
What the heck happened to me? Where have I been? What have I been doing?
Well let's see, I fell off the face of the Earth into a big mess of a life. Don't worry though, just minor set backs, nothing too major. There were some life changing moments, such as the death of my uncle, followed by the death of a great uncle. It seems every time I thought I was on the mend something else would come up. Or would it? I truly think I tried to find any reason to not do what I know I needed to do.
I quit working out, my eating has gone down hill and I'm back up to around 251, but I've been able to maintain it. That's something right? But seriously, my bow business took off and I've been working hours upon hours making hair bows and trying to keep up with everyday life. I booked several photography gigs and the editing kept me busy as well. So it sounds like a good thing right? Not so much.
After much soul searching we decided that I'm going to cut back to custom orders only for my bow business. I can't give it up because I love doing it, but I definitely can't ignore my children for it either. I honestly feel like that's what I was doing and that in itself makes me feel like horrible mother of the year.
I also would really love to start focusing on my photography business more, as well getting back to the basics of me; eating healthy, exercising again, etc. Now I'm not one for New Year's resolutions. Why? Because I NEVER STICK TO THEM...
But I do need to re-dedicate myself to getting back to being healthy. We've even shortly discussed the idea of signing up for The Biggest Loser. However, I don't know how that would work with my hubby's current schedule.
So I apologize to those that are/were following me and if I left you feeling abandoned. But I'm sure you understand how things can get crazy with a family. :D
