Kansas City's Cowtown Broiled Chicken

Who needs another chicken recipe?? I DO! We are huge fans of Kansas City's Cowtown All-Purpose Barbecue Seasoning on our brisket. It gives it that special umpf. Tonight I was dreading dinner. Not sure what to make, didn't have a single plan laid out and then it hit me. Why not try Cowtown on chicken?

There are ups and downs to using Cowtown seasoning. Ups: No calories. Downs: 170mg of sodium per 1/4 teaspoon.

Kansas City's Cowtown Broiled Chicken

Ingredients
* 2 Tyson Natural Trimmed & Ready Boneless Skinless Chicken Breasts (about 1lb) - unthaw
*1 tsp Kansas City's Cowtown All-Purpose Barbecue Seasoning

Steps
1. Pull out your broiler pan, yes that goofy looking vented pan that resides underneath your oven in the drawer you never access.

2. Take a piece of foil and line the bottom of your broiler pan. Seriously, you'll thank me when it comes time to clean up.

3. Take out your cooking spray and lightly spritz the top of the broiler pan.

4. Split your chicken in half lengthwise. You'll end up with 4, 4oz pieces of chicken this way.

5. Take 1/4 teaspoon of Cowtown per piece of chicken and rub on the chicken.

6. Place your chicken on top of the broiler pan. Place in a pre-heated oven (BROIL - HIGH) on the next to highest shelf. Broil for 10-13 minutes or until the juices run clear and the chicken is no longer pink.

Plate your chicken and pair with steamed Whole Grain Brown Rice and steamed mixed vegetables. Nummy! Good news you can have a 4oz piece of Broiled Cowtown Chicken for 100 calories!!! It is simply too easy and quick. [Don't forget to click the picture for a larger view.]


For those unsure where to locate the Cowtown Seasoning...Here is KC we get it at Hy-Vee. We used to get it at Price Chopper, but they quit carrying it. You can also order it from Smoke N Fire. I'm not sure where else you could locate it outside of KC, but I'm sure you can find it on the internet. ;)

Okay, this is a little off topic, but I bought a new oven this christmas, and it didn't come with a broiler pan. What's up with that??

It's breakfast time right now, but after seeing that photo, I'm hungry for chicken!

Guess what. I went to a yard sale today and picked one up for nine bucks! It was still in its original wrapping and had a Lowe's price tag of $25. :)
