This is a super easy recipe and you can make it with items you have on hand. Perfect in a pinch! With two littles, recipes like this are a God send. I hope you enjoy it. If you do try it out, let me know if you liked it (or did not like it).
Lemon Pepper Chicken & Rice
Boneless Skinless Chicken Breasts
Lemon Pepper Seasoning
2 Cups Minute Rice
1 14oz can Swanson Chicken Broth
1 15oz can Cream of Chicken Soup
1. Heat a large skillet to medium and place halved breasts in the pan. [NO OIL REQUIRED] Sprinkle with Lemon Pepper seasoning. Cook until browning and juices run clear. Remove chicken from the skillet and place, covered, in the microwave.
2. Pour the chicken broth into the skillet and heat until nearly boiling. Pour in the 2 cups of minute rice and boil for a few minutes. Once liquid is nearly soaked up by the rice, pour the cream of chicken soup into the skillet and mix well. [Sprinkle with more lemon pepper if you like the extra flavor]
3. Reduce the heat to low and add the chicken back to the pan. Cover and let sit on the burner for five minutes. In the mean time pop a fabulous bag of Green Giant Steamer vegetables into the microwave.
4. Plate your food and chow down.
See, simple, quick and oh so yummy! The chicken has the great lemon pepper taste and the rice is nice and creamy (and lemony if you're like me and add the lemon pepper to it as well). @Faith...just as yummy. ;) I love my brown rice, but I'm trying to use up what we have in the house. You may have to let it cook a little longer, but I'm sure it'd be just as good.
@Lynn. According to the pic (I had to look) it's golden cauliflower. Can't say enough good stuff about Green Giant steamers.
