I'm getting desperate for recipes...seriously. There are tons out there, but the majority of what I'm finding have to have special ingredients, and I'm not to thrilled about that. I did get lucky tonight and found this recipe which I was only missing one ingredient, but no biggie, easy substitution ahead.
First off I was missing Fresh Tarragon or even Dried Tarragon, but I read online that Basil is a good substitute. I opted for my Dried Basil and used 1/2 tsp. Secondly it calls for sour cream, yes I had sour cream in the house but I also had some Plain Greek Yogurt that I had to use up.
My mouth was watering while the sauce was simmering, let me tell you. The chicken was nice and juicy and it had a bit of a mustardy taste, BUT that's my fault as I squeezed the bottle too hard when measuring out the Dijon mustard. It was a fabulous meal and both kids chowed down too. I served it on a bed of Whole Grain Brown Rice and Steamed French Green Beans. I even got a thumb up from Baby Girl.
